Well there sportsfans I know it’s been awhile so I figured I’d best get some thoughts out right quick before someone reported me to missing persons. I wish I could report that it was a shortage of liberal treachery, stupidity, obtuseness, shortsightedness, , sedition ..etc., which has been keeping me away. Sadly, the enemies of freedom and the vision of our Founding Fathers never rest.

Sometime back I told you all that I would be expounding on the thought that so much of what you think you know about history is nothing but a pack of lies and distortions. Well one reason for this contention of mine is simply that the radical left permeates the halls of academia. Now if you don’t happen to believe that and you think that your children are going to get a completely balanced education when you finally pack them off to college, well I’ve got some nice ocean front property outside El Paso I’d love to sell you.

You see the academicians are so far left and so blinded by their hatred for George W. Bush, that they are completely willing to engage in the most extravagant display of utter hypocrisy imaginable. Many of you all who’ve followed my commentary from the beginning know that I’ve had my issues with the President. Mostly on border security, failure to increase the size of the armed forces and the asinine fighting of a war on politically correct terms. That said, he has certainly done more than any likely dhimmicrat pretender in prosecuting the conflict we find ourselves in.

Now it seems that G.W Bush has announced the establishment of his presidential library at Southern Methodist University in Dallas. You would think that academics and students alike would be thrilled to have a presidential library at their school. If they were truly committed to academic achievement and scholarship, the establishment of such a facility would be hailed. This is an unimaginable resource for historians, political scientists, sociologists (depending on whatever the hell it is they do..) and all manner of researchers. You might also think that this was safe bet by the President to announce his presidential library to be formed at a private school with a religious background. Well that might have worked for Catholics or Baptists but not so the Methodists.

Roughly 15 seconds after the President made his announcement, the protestors in waiting that populate any college campus and their Marxist professor allies were in full outrage mode. You see, if they truly cared about the advancement of academics and scholarly achievement they would have welcomed the library and an open debate about the issues. Of course that is not the means of the left. They seek to deny your speech because they know that if the American public, legitimate Americans knew what they really thought best for you, we’d find a way to shut down their activities. So naturally the protests are on at SMU. Forget the potential for increased student funding. Forget the fact that a Presidential Library is a rare resource of incalculable value for research. Forget that this could be a boon to the campus and the greater community. No, the commissars that patrol the halls of SMU have decided that their hatred of Bush is far more important than providing the students with unparalleled resources.

This is simply staggering. If they hate the President so much, certainly they have every right to protest him, to call him every name in the book, to cast their ballots. Instead the left chooses to engage in blatant hypocrisy pretending to champion free speech, scholarship and achievement, all the while crying that the establishment of the Bush Library at SMU should be disallowed. They are no more champions of free speech than is Castro in Cuba, but then they love him more than Bush so it should surprise no one that they emulate his behavior….

Now I have to give some props to Rachael Ray, Food Network star and the author of this long overdue recipe. Seein’ as how we’re good Catholics around here, Friday usually is fish night, (we been practicing for Lent) and knowing that reader Terry Garcia is always looking for a fish recipe, I came across this one. Man oh man, this was about the best tuna I’ve ever gotten on the outside of. It was flavorful and moist even when well done. (I prefer mine to be a little rare)

4 fresh tuna steaks, 8 ounces each, 1-inch thick
1 lemon, zested
3 sprigs fresh rosemary, about 2 tablespoons leaves stripped from stem
Handful flat leaf parsley
3 cloves garlic, crushed
Coarse salt and black pepper or grill seasoning
Extra-virgin olive oil, for cooking

Rinse and pat tuna steaks dry. Place zest on top of cutting board. Pile rosemary and parsley leaves on top of zest. Pile garlic and some coarse salt and black pepper or grill seasoning on top of herbs. Finely chop the garlic, herbs, and spices. Drizzle the olive oil over the tuna steaks just enough to coat each side. Rub herb and garlic mixture into fish, coating pieces evenly on each side. Let stand 10 minutes.
Grill tuna steaks 6 minutes on each side or 4 minutes on each side, if you prefer pink tuna at the center. Cook steaks over: high setting on indoor electric grill, medium high heat on outdoor gas grill or, 6 inches from hot, prepared charcoal. Best of all this recipe took only minutes to prepare, and went wonderfully with some brown rice and salad with fresh bread. On top of all that, I took her advice and broke out the old electric grill and it worked like a champ on it…Now then good eatin’ on y’all!!
